Ishikawa boasts the gelateria run by gelato master Taizo Shibano, the first Asian to rank the top in the world of gelato in 2017.

Taizo was born in Noto, Ishikawa, and joined the family dairy business after graduating from Tokyo University of Agriculture. He began creating gelato using his own techniques as a way to get people of all ages to enjoy the great taste of local dairy. He opened Malga Gelato in 2000, entering competitions in Italy to test and hone his skills, coming to the conclusion that the theory of composition applies to delicious gelato.

“Malga” means a pasture on a hill in Italian. Using fresh milk from cows raised in the nature of Noto and select local ingredients, Taizo seeks to create “gelato that relies on the five senses”, especially aroma. Even the simplest flavors feature spices or flowers or aromatic oils that bring out a very distinct and pleasant aroma.

Some of the most popular flavors at Malga Gelato are “Grand Pistachio” “Noto salt Pistachio and Orange Vanilla Mascarpone” and “Pine, Apple, Celery” which earned Taizo his best in world ranking. The “Grand Pistachio” uses Noto milk and his original pistachio paste made from freshly roasted pistachios, bringing out the gentle flavor of milk that balances well with the rich pistachio flavor. “Mascarpone and Orange Vanilla” has a mascarpone gelato with the aroma of orange and vanilla, with a berry sauce that adds just the right tartness to make it refreshing. “Pine, Apple, Celery” is made from a cold pressed blend with lime juice and mint, and has a very surprising aroma when you take a bite. There are other flavors that make the most of local ingredients such as Kaga boucha and Kanazawa sweet potato, all of which are available for online purchase.
