Japanese Sake Goes Through Kaleidoscopic Changes

”Kujira” Crowned after its homeland

”Chiyo Shuzo” is located in Kujira, Gose-shi Nara. Their leading lbael is the ”sake” named after their homeland, ”Kujira”. As inferred by this name, the brewery is particular about locality.
They use water from adjacent Mt. Katsuragi for all processes of ”sake”. They also self-harvest Yamada-nishiki brand rice. They are also particular about influences inflicting the microorganisms that exist in the brewery since their foundation.
Their ”Kujira” is ”sake” that has a clear and refreshing aroma with a full-bodied thick flavor that spreads throughout the mouth. It is in perfect balance with just the right amount of acid, that does not interfere with the original taste of ”sake”.

Imagining how it will be enjoyed

There is another ”sake” called ”Shinomine”.
”The interesting thing about ”sake” is that there are variations; you can drink it hot or cold, you have the diluted and undiluted sake, different manufacturing styles and different ways of consumption.” Sakai, the owner of the company commented, ”Shinomine” was created in response to different needs by using Yamadanishiki or Omachi rice brands in accordance to fit cold or hot sake, etc.
Sake is not fully completed at the brewery. As they create their sake, the brewers think about ways their ”sake” can be enjoyed. This stance enables us to enjoy the ”sake” in comfort.
