”Katano Sakura” Including the word ”sakura” (cherry blossom)
There is a Japanese poem that includes reference to the region where the brewery is located, called ”Katano”. Katano was a favorite place for court nobles in Kyoto to enjoy hunting, and also famous for its cherry blossoms. That is why the name of the ”sake” made by Yamano Brewery is called ”Katano Sakura”. However, the Chinese character used for ”Katano” in the brand name is different from that used in the regional name, while both are pronounced ”Katano.” The meaning of ”Katano” in the regional name means ”a field where people enjoy hunting”, whereas the meaning of ”Katano” in the brand name refers to ”a location where only authorized people are allowed to hunt”.
Great care goes into brewing the ”sake”
As reflected in its brand name, ”Katano Sakura” is a fine, premium ”sake” made with extra care. 80% of the production from this brewery is categorized as ”refined sake” which include ”ginjoshu” and ”junmaishu”, but half the amount is taken out of the cellar as unprocessed ”sake” (raw sake) which is considered to be very rare. As a result, the annual production of this brewery is only about 180 liters.
The beauty of the ”sakura” in ”Katano” area is reflected in the graceful taste of the ”sake” produced by this brewery every year.
