Chef Higashijima of Jidaiya is the creator of Sasebo's famous "lemon steak". The lemon steak was born from the idea of slicing the steak into thin slices in the style of sukiyaki, as Japanese people find steaks too hearty. Placed on a griddle and topped with an original shoyu-based sauce, the lemon steak is a masterpiece. The lemon steak is also excellent when served with rice on top of the griddle and tossed with the sauce. This is a must-visit restaurant.
